School Cafeteria Buffet: HACCP Checklist That Passes Audit
School cafeteria buffets have stricter food safety rules than restaurants. Health inspections happen twice a year, and one failure can shut down the lunch program. This checklist covers everything inspectors look for.
Temperature Control (Every 2 Hours)
Hot food must be at 60°C (140°F) or above. Cold food must be at 5°C (41°F) or below. Record every 2 hours on a temperature log. Inspectors ask for the last 30 days of logs — no log, no pass.
- Chafing dish water temp: 85°C+
- Food internal temp: 60°C+
- Refrigerated display temp: 5°C or below
- Ice beds: ice still partially frozen at service end
Allergen Labeling (Non-Negotiable)
Every dish must have a label listing all 9 major allergens: milk, eggs, fish, crustacean shellfish, tree nuts, peanuts, wheat, soybeans, sesame. Use large, clear labels. Pictures help younger students identify allergens.
Serving Station Setup
- Separate utensils for each dish: no sharing spoons between dishes. Cross-contamination risk.
- Tongs, not hands: every self-serve station has tongs or serving spoons. No touching food directly.
- Gloves available: for students with allergies who need staff assistance.
- Hand sanitizer: at the entrance to the buffet line.
Food Handling Rules
- No re-serving food that students have already taken. Once it leaves the line, it cannot come back.
- Discard any food that has been in the danger zone (5–60°C) for more than 2 hours.
- Label every pan with the time it went into the chafing dish.
- Wipe down serving stations every 30 minutes.
Documentation to Have Ready
- 30 days of temperature logs
- Staff food safety certification (all kitchen staff)
- Allergen list for every menu item
- Cleaning schedule and logs
- Pest control records
School cafeteria inspections are not about catching you out — they are about making sure students are safe. Follow this checklist, and the audit will be routine, not stressful.
